Preparation

  1. Mix Farro, cucumber, fruitonsTM, olives, and white beans, in a mixing bowl. 

  2. In a separate mixing bowl whisk together dressing ingredients. 

  3. Drizzle ½ the dressing over the farro mixture. 

  4. Add the feta cheese and toss with the spinach

  5. Add additional Salt and Pepper as needed.

Ingredients

Salad
  1. 2 C  cooked Farro, cooled (follow directions on package)
  2. 1 bag  fruitons® Seasoned Sun Dried Tomatoes
  3. 1 C  chopped cucumber ( )
  4. 1 can white beans, drained and rinsed
  5. 1 C   roughly chopped Kalamata Olives
  6. 6 oz crumbled feta cheese
  7. ¼ C  chopped Italian Parsley
  8. 1 small bag of spinach
Dressing
  • 1/3 C Virgin Olive Oil-
  • 1 ¾ Tbsp lemon Juice
  • 2 cloves of garlic
  • ½ tsp salt
  • ¼ tsp black pepper
  • Pinch of red pepper flakes
