Preparation
Salad
- In a large bowl add the first 6 ingredients, toss lightly.
- Add remaining ingredients and toss
Pickled Onion
- In a small bowl mix the warm water, salt and honey, stir until honey dissolves. Add vinegar.
- Thinly slice the onion and add to vinegar mixture. Add more water if necessary to cover onions.
- Set aside for at least 2 hours. Will keep well in refrigerator for weeks

- 4 C Spring Mix Lettuce
- C ½ fruitons® California Sun Dried Cherries, chopped
- C ¼ C Pepito Seeds
- C ½ C crumbled goat cheese (blue cheese is good too!)
- C ½ C Avocado diced
- C ¼ C Pickled Onion- see recipe
- 1 ½ Tbsp Seasoned Rice Vinegar- or Apple Cider Vinegar
- 3 Tbsp Olive Oil
- ¼ tsp salt
- ½ tsp pepper

- 1 medium red onion
- 1 tsp salt
- ½ C apple cider vinegar
- ½ C warm water
- 1 Tbsp Honey
