Preparation
Salad
1.Roast or boil beets until just tender. This takes about 45 minutes. When cool, peel beets,then cut into cubes.
Dressing
- Blend all ingredients, except the oils, together in a bowl. Whisk the oils in rapidly to fully emulsify the dressing.
- Sprinkle Cherries and beets on top of the greens. Toss with dressing and serve.
