Preparation

Mix Farro, cucumber, fruitonsTM, olives, and white beans, in a mixing bowl.
-
In a separate mixing bowl whisk together dressing ingredients.

Drizzle ½ the dressing over the farro mixture.

Add the feta cheese and toss with the spinach
-
Add additional Salt and Pepper as needed.
Ingredients
Salad
- 2 C cooked Farro, cooled (follow directions on package)
- 1 bag fruitons® Seasoned Sun Dried Tomatoes
- 1 C chopped cucumber ( )
- 1 can white beans, drained and rinsed
- 1 C roughly chopped Kalamata Olives
- 6 oz crumbled feta cheese
- ¼ C chopped Italian Parsley
- 1 small bag of spinach
Dressing
- 1/3 C Virgin Olive Oil-
- 1 ¾ Tbsp lemon Juice
- 2 cloves of garlic
- ½ tsp salt
- ¼ tsp black pepper
- Pinch of red pepper flakes
