Preparation
- Some great combinations include…Delicate butter lettuce with toasted hazelnuts, dried cranberries and sun dried pear slivers
- Chopped Kale with tart sweetened cherries, red onion and salted sunflower seeds
- Sweet Boston lettuce topped with tangy California apricot bits, blue cheese and candied pecans
- Tuscan bread salad with sun dried tomatoes, marinated black olives and toasted pine nuts
Cranberry vinaigrette
Our Traina Family’s Favorite Italian Oil & Vinegar Dressing
- Whisk together the first 3 ingredients.
- Add garlic, mustard, salt and pepper. Whisk well.
- Slowly pour the olive oil into the bowl in a steady stream, incorporating and emulsifying the oil.
- Add shreds of fresh basil to the top of the salad, plus another grind of pepper and salt.
Ingredients
Cranberry vinaigrette
- ½ cup canned whole-berry cranberry sauce or cranberry jam
- Juice of 1 fresh orange
- ¼ cup pear or champagne vinegar
- 1 t honey
- ½ cup olive oil
- 1 T freshly snipped chives
- Salt and freshly ground pepper to taste

- ¼ cup good quality red wine vinegar
- Juice of 1 fresh lemon
- 1 t sugar
- 1 garlic clove, smashed
- 1 t Dijon mustard
- ¼ t sea salt
- Healthy grind of fresh pepper
- ½ cup olive oil
- 4 basil leaves, shredded
