Start by cutting off the asparagus bottoms and discard. Cut the tips of the asparagus and add them into a bowl. Since we are using raw asparagus, the best way to serve the shoots is to shave them into thin ribbons then add them with the tips. This technique avoids having to eat through the tough, fibrous stalk and it adds a bit of elegance to the overall dish. Don’t worry, shaving asparagus is easy. Just use a vegetable peeler as seen in the video.
Now it really gets easy. Add to the bowl, sliced radishes, julienned sun dried tomatoes, walnuts, shaved Parmesan, lemon zest, salt, pepper, lemon juice and top it off with sun dried tomato olive oil.
