Preparation

There are two ways to make this easy, crunchy snack mix.

Method 1:

The easy way: buy a package of Corn nuts -- or a mix of oil-baked salted beans
(Pictured: prepared blend of garbanzo beans, giant white corn, almonds, fava beans & giant lima beans)

Add half of a 6-ounce bag of fruiton’s® Seasoned Sun Dried Tomatoes, Julienne Cut.

Mix together.

The snack mix is ready to serve.

 

Method 2:

Alternately, you can customize your mixture

Start with 1 lb. assorted dried beans which you soak overnight (giant corn kernels, garbanzo beans, lima beans, etc.)

Drain, pat dry and let air dry thoroughly then toss beans in ¼ cup of canola oil, 1 tablespoon each of sugar and sea salt.

Bake at 400˚ for 45 minutes, stirring every 10 minutes.

Toss cooled roasted beans with ½ of a 6 ounce bag of fruiton’s® Seasoned Sun Dried Tomatoes, Julienne Cut.

Mix together and serve.
